(10 September, 2013, Hong Kong) – Located between the Kuroshio and Oyashino currents, Japan has some of the finest, most diverse and productive fishing grounds in the World. And now diners at Yagura can enjoy those seafood delights freshly flown in on a daily basis from Tokyo, Kyushu and Fukyoka.
All of our wild-caught seafood is freshly frozen and flown to us the same day. Once it arrives, our newly appointed Head Chef Ricky then handpicks the finest to display at the seafood counter where diners can request their own favourite dishes and cooking methods.
At Yagura, you will find an array of seasonal seafood*, including Tilapia, Sea Bass, Snapper and King Prawns:
Tilapia
Thin Cut Tilapia with Ponzu Sauce (HK$98 per dish) is recommended for freshly caught Tilapia: it is mild and delicate with firm but flaky texture, you can also request grilled Tilapia to make it a little more savoury.
Sea Bass
Light, fresh and firm in texture, sea bass can be served in many ways such as sashimi, grilled and deep-fried. Try our Deep-fried Tofu Seaweed Roll with Sea Bass Stuffing (HK$88 per dish) – Chef Ricky wraps the tofu and sea bass with seaweed. The combination of the luxurious and buttery texture of sea bass with the sweet, salty seaweed is delightful.
Japanese Tiger Prawn
Japanese Tiger Prawn is perfect for sashimi and grilling – don’t miss the Eggplant with Japanese Tiger Prawns (HK$158 per dish), the mouthwatering grilled cheese melts into the eggplant and succulent tiger prawn.
Snapper
Delight your taste buds with this warm Sweet Corn Miso Soup with Snapper and Seasonal Vegetables (HK$58 per bowl), it has a beautiful, smooth and velvety texture that is luscious and creamy.
On top of the four seasonal selections, Chef Ricky also offers ingredients and fish that are well recognised in Hong Kong but are prepared with a Japanese twist, such as Beakfish Sashimi and Grilled Grouper with Salt.
