EATON, HONG KONG APPOINTS CHUNG YUK KAU AS NEW EXECUTIVE CHEF OF YAT TUNG HEEN – EATON, HONG KONG BRANCH
– AN INGREDIENTS-ORIENTED CHEF TAKING CANTONESE CUISINE TO A NEW LEVEL


(Hong Kong, 2 August 2013) Eaton, Hong Kong recently announced the appointment of Chung Yuk Kau as Executive Chef of Yat Tung Heen – Eaton, Hong Kong Branch. Leading the Yat Tung Heen culinary team, Chef Chung will work shoulder to shoulder with award winning Chef Tam Tung (Master Chef of Yat Tung Heen Chinese Restaurant Brand and Executive Chef of Yat Tung Heen – Great Eagle Centre Branch) to revitalise the authentic taste of Cantonese cuisine at the two Yat Tung Heen Chinese restaurants.

Chef Chung brings to his new role over 30 years’ Chinese culinary experience in luxury dining rooms and clubhouses (including Hong Kong Chinese Bank Association, The Cullinan Club and Golden Bay International Golf Club) and one 5-star hotel (The Mira Hong Kong), since beginning his culinary career at Fok Lam Moon, one of the leading Chinese restaurants in Hong Kong.

Like other experienced chefs, Chef Chung stays true to his own cooking fomula. In the kaleidoscopic Chinese gastronomic world, Chef Chung believes knowing the ingredients is just as important as technical cooking skills. This ingredients-oriented principle has been recognised by different cooking competitions and has helped Chef Chung and his culinary teams earn a number of awards.

In recent years, Chef Chung spent his time working aboard, such as Tokyo – Japan, Shanghai and Shen Yang – China. He explains, “Working overseas and in new environments helps broaden culinary awareness but regardless of geography, it’s the quality of the ingredients we use and their provenance that must remain at the core of everything we do. That should be a universal principle and is very important to me personally.”
